Elote chicken pasta salad

 For the chicken-

20 ounces of chicken breast

1 tbs olive oil

1 tsp onion powdr

1 tsp garlic powder

1 tsp chili powder

1/2 tsp cumin

dash of cayenne if you want it spicy


For the pasta-

8 ounces cooked rotini

1 small red onion, finely chopped

1/2 cup chopped cilantro

10 ounces fire roasted corn

1/4 cup crumbled cotija cheese


For the sauce-

3/4 cup mayo

3/4 cup sour cream

1-2 chipotles in adobo

1 tsp onion powder

1 tsp garlic powder

1 tsp chili powder

1/2 tsp cumin

juice and zest of one lime

a little sweetener

salt and pepper


Toss your chicken in the spice mixture and either grill or pan fry until done, chop and set aside

In a large bowl, combine the slightly cooled pasta with the onion, cilantro, chicken, cheese, and sauce
