Fluffy pancakes

 Sometimes you need three or four recipes for pancakes, because this one is good for it's own reasons.  These are fluffy and tall.  From Joshua Weissman


2 c (300 grams) AP flour

1/4 c (62 g) sugar

1 tsp (4 g) fine sea salt 

1/4 tsp (1 g) baking soda

1 tbs (12 g) baking powder

1/2 c (120 ml) milk, whole preferred 

1 cup (240 ml) buttermilk 

1 egg

1 egg yolk 

2 tbs (21 g) vegetable oil

1 tsp (4 g) vanilla extract 


In a large bowl add flour, sugar, baking soda, baking powder, and salt and mix to combine

Then add the milk, buttermilk, egg, egg yolk, vegetable oil, and vanilla and stir just to combine

Do not overmix
