Chopped salad

It's all over the internet but here's where we started

5 cups finely chopped romaine lettuce
2 cups finely chopped red cabbage
4-5 sliced scallions
2-3 chopped roma tomatoes, finely chopped (optional)
3 cups cooked ditalini pasta
7 pieces of cooked and chopped bacon
a few ounces of gorgonzola or blue cheese

For the dressing
1/4 cup white balsamic vinegar
2 cloves of garlic, peeled and coarsely chopped
1/2 tsp sugar
1/2 tsp oregano
1/4 tsp salt
1/4 tsp black pepper
1/2 cup olive oil

Pulse the vinegar through the black pepper then slowly add the olive oil until emulsified

Add the salad ingredients to a large bowl and then add enough dressing to cover, remember you can always add more.

We keep leaving tomatoes out since some of my kids are iffy with raw tomatoes
I started adding lunch turkey to my extra salad when I've run out of bacon
And some people are gonna hate this but a few raisins in for a touch of sweetness is a nice touch too

This is also our go to vinaigrette right now too
