Elotes / Mexican Street Corn

I've tried this before and it wasn't this yummy.  Messy?  Yes!  But delicious.  My littlest guy didn't want anything to do with it though.  I scraped off the cheese and sour cream.  He's a corn purist, I guess.

Peel your corn but keep the husks on.
Wrap the corn with tin foil and grill until they are done. 
Mix up 1/4 cup mayo with 1/4 cup sour cream or crema if you can find it.
Working over a bowl put the sauce on all sides of your corn.
In another bowl, crumble up some cotija cheese and add that to the cream mixture.
If you're so inclined, all a little bit of cayenne pepper, chopped cilantro and squeeze of fresh lime juice to the corn as well.  Cayenne is a must for me but we forgot about the other two and it was delicious.
