Salsbury steak with onion gravy

We didn't get to eat until almost 6:30 but it was well worth the wait on this for a week night meal (it was my fault for only having one pound of ground beef defrosted).

1/4 c. oil, divided
1 large onion finely chopped, about 1 1/3 cups
2 slices of white bread
1/2 c. whole milk
2 lbs ground beef
2 cloves of garlic, minced
1 large egg
2 tbs chopped flat leaf parsley or 1 tbs dried parsley
2 tsp Worcestershire sauce plus another dash
Salt and pepper to taste
1 tsp corn starch plus more for dusting
1 1/2 c. beef broth

Add tsp oil and 1 cup of onions to a medium fry pan and cook over low heat until they are browned and carmelized, abouter 30-40 minutes

Tear your bread into small pieces and let it soak lightly in the milk for a 10 seconds or so
Add it to a large bowl and combine with the remaining onions, meat, garlic, egg, parsley, Worcestershire sauce, salt and pepper

Combine with your hands and form into patties, I made them kinda oblong shaped about 5 inches long, 3 inches wide and 3/4 inch thick (the recipe called for 6 but I ended up with 7, I wanted to keep them all the same size); dust them all with cornstarch.

In a large pan, heat the rest of the oil over medium heat and cook the patties, 3 at a time about 6 minutes on one side, flipping once for a total or 9 minutes total.  The center of the patties should feel firm if they are done, remove from the pan when they are done.

Repeat with the remaining patties and remove them from the pan. 

Add the cooked onions and add 1 tsp of cornstarch and whisk for a minutes or two.  Stream in the broth with a dash more Worcestershire and cook until thickened.

Add the patties back to the pan and cover with sauce to heat through.

We served with mashed potatoes and steamed green beans.
