Chicka Chicka Chickpea Salad

1 14.5 Oz. Can Chickpeas
2 chopped roma tomatoes
1/4 red onion, diced
1 small cucumber, peeled and chopped
1 garlic clove minced
1 tbs fresh dill, chopped
2 green onions, chopped
1/4 c. olive oil
1 lemon, juiced
1/4 tsp pepper
salt, to Taste

Mix together chickpeas, tomatoes, red onion, cucumber, garlic, dill and green onions.
Add in the lemon juice and olive oil.
Season with the pepper and salt.
Cover and let sit in the fridge for an hour or more.

Toddler review-
M loves beans so this was a hit with him. P and C liked this too though they would prefer more cucumbers "light green stuff" and less onions. As a rule though, I try to make recipes as written the first time and then make changes after that. I'll make this again as a summer side dish but keep it in rotation with others so they don't get sick of it.
