Cheese dip / Queso dip

From Serious Eats. Much tastier than the store bought kind.

8 oz shredded cheddar (please grate your own)
1 tbs corn starch
1 c. condensed milk + more for thinning if necessary
Hot sauce to taste (Frank's, Tabasco or my new favorite Cholula)

Toss cheese with the corn starch.
Add cheese and milk and heat over low heat, stirring constantly until the cheese melts.
Once melted, add hot sauce to taste.

Serve with french fries for dipping or for queso, stir in a can of drained Rotel and heat through, serve with tortilla chips.
