Turkey and mushroom burgers

 This sounds totally weird but it's an excellent burger.  Going to make these again, for sure.

We didn't make the aoli, just used regular mayo.  The caramelized onions are a must.

1 small onion, caramelized over medium to low heat until jammy

Even on low heat, my onions always start to brown when what I want is soft.  I usually cheat and add Worchestershire sauce and a little water.  I can get them to cook a little longer this way.  

The aoli is mayo with lemon juice, garlic, and chives mixed up, make to your preferred flavor or just use mayo

For the burgers

2 lbs lean ground turkey

2 portabella mushrooms, gills removed and grated

16 ounces of shredded cheddar

1 tsp garlic powder

1 tsp salt, adjust to how salty your cheese is

Black pepper to taste

minced fresh parsley or dried if you have a garden full of it


Mix the burger ingredients and make into 6 patties, with a little divot in the middle of the burger

(the original poster made the burgers more tall.  We like burgers that fit the bun after they are grilled so we made them flatter and bigger in diameter)

Grill each side about 5-6 minutes a side

Serve with lettuce, tomato, red onion, your caramelized onions and aoli/mayo


We had a package of ground turkey that 1 1/2 lbs so we used 13 ounces of cheese and a little less on the garlic powder and salt.
