M's kale salad

Recipe from a family member.  Incoming vague measurements.


Kale, sliced thinly into ribbons then cross cut, then washed

EVOO 

salt and pepper

Optional but recommended red wine vinegar, lemon juice, parmesan cheese for serving 


In a large bowl combine your kale, olive oil, salt and pepper (and your optional lemon juice and red wine vinegar) and squish everything together.  Don't just rub the strips of kale together, really mash it in your hands.  It will break down and become more tender.  Even better, do this once and then store the rest in the fridge.   Eat veggies later, prosper.

I like to add parmesan cheese just before serving.

Add whatever ingredients you would like.
