Chicken and gnocchi soup

 There are copycats all over the internet.  Mine is not from one I can easily link.


3-4 ribs of celery, finely chopped

1/2 onion, finely diced

1-2 large carrots, grated

enough garlic for your liking (4 large for us)

2 chicken breasts or similar amount of cooked chicken 

4 cups chicken broth 

1 1/2 lbs gnocchi 

garlic powder, onion powder, salt, pepper, thyme

2 cups half and half 

fresh or frozen spinach 

1 tbs corn starch dissolved in some water for thickening


Heat some olive oil in a large heavy pot and cook the celery and onion first, then add the carrot and garlic, over medium heat about 5 minutes total

Add in the chicken, broth, and seasonings and bring to a boil

Add gnocchi and cook for 3 minutes

Cover and simmer for 10 minutes

Remove cover and add the half and half, spinach, and corn starch 

Cook until slightly thickened and serve
