Skillet Cornbread

 I need to look up my high altitude adjustments on this one.  It's a good starting point but I think it needs a little more moisture from buttermilk.

From Budget Bytes 

From out your 9 inch cast iron pan and preheat it in the oven

Also bring out your bacon fat and let it come to room temperature, you're going to add a tablespoon or two to the pan before pouring in the batter


1 cup cornmeal

1 cup AP flour 

1/4 cup sugar

4 tsp baking powder

1/2 tsp salt

1 cup milk (though I think we used buttermilk)

1 egg

1/4 vegetable oil


Preheat your pan at 425

In a large bowl whisk the cornmeal through the salt to combine

In a smaller bowl, mix the milk, egg, and oil together

Mix the wet ingredients into the dry and stir just to combine, it's ok if it's lumpy


When the oven is preheated, spoon in a few tablespoon of bacon grease and swirl to coat the bottom

Pour in the batter and make for 20 minutes until the top and edges are golden brown
