Ciabatta for sandwiches

We're trying our hands at some other kinds of high hydration breads.  They are hard to work with in the beginning since it's so sticky but a little bit of work and a lot trust and it's come out pretty well.  We made one of these sandwiches a standard fancy grilled cheese with turkey.  The other was from an actor turned cookbook writing and his fave sandwich.
