Jalapeno hot sauce
Adapted from The Catalyst Cook
Please note, the original recipe is super vague. Also note that this recipe is written up without tasting the finished and rested results. We don't know what it tastes like yet.
Special equipment needed : a powerful blender
Yield- A LOT like we need to share with neighbors and friends and family
18 seeded jalapeno peppers
2-3 large cloves of garlic, crushed
3 1/2 cups white vinegar
salt to taste
Roughly chop the jalapenos and let sit in a water bath for 5 minutes
Blend the peppers once or twice and then add garlic and pulse a few more times
Add vinegar and then blend until smooth
Pour into a medium pot and bring to a simmer
Cook for about an hour
Cool it down and add vinegar to thin it out as desired
Check for seasoning
Pour into sterilized jars and chill for a week before tasting
