Bahn mi fries
From our paleo days. On Paleo OMG
We usually use the red/orange sweet potatoes in our house. I always heard they were more nutritious and it's one of the first foods we gave to our kiddos when introducing solid foods. Use the white flesh kind for this recipe though. **
3 large sweet potatoes cut into fry shape
1/3 cup mayo
sriracha to taste but it should be spicy
2 tsp rice wine vinegar
1 tsp honey or other sweetener
1 1/2 lbs ground pork
3 tbs soy sauce
2 tbs sriracha sauce
1 tbs sesame oil
1/2 tsp fish sauce
1/2 tsp red pepper flakes
1/4 tsp garlic powder
1/4 tsp onion powder
1/4 tsp salt
juice of 1/2 lime
Toppings "I love toppings. Sometimes all I ask for is toppings."
1 cucumber, julienned*
1 carrot, julienned*
cilantro, chopped
1 jalapeno, sliced
lime wedges
Toss the potato fries with a pinch of salt and a few tablespoons of oil or ghee and bake at 375 for 30 minutes, flip and cook another 15 minutes on a sheet pan with a rack on top
Add some adobo seasoning or whatever you have after you flip them
Mix the mayo, sriracha, rice vinegar and honey in a small bowl and set aside
Cook the pork until almost all the pink is gone and then add in the soy sauce, sriracha, sesame oil, fish sauce, red pepper flakes, garlic powder, onion powder, salt and lime juice and simmer a few minutes to let the flavors combine
When the fries are done, assemble the potatoes and top with the pork mixture, the veggies and top with sauce
*We always make a new recipe as written the first time. And while this was excellent, Mr. PB&C and I both thought it might be nice to have a slightly pickled carrot and cucumber (maybe even daikon radish too?) to the top of the fries.
**Another note, i might have gone more on the dry spices. As written, it might be a little bland.
I think I might try this. Maybe my resident picky eater would eat this with regular fries> Could I make this with russet potatoes?
