Crockpot chicken masala
Writing it down though it doesn't contain specific measurements. The recipe writer is a chef so it's kinda to taste.
Edit-It took me a day but I realize this recipe has the same flavor profile as Spenny's chicken. I like this recipe better for it's use of chicken thighs (much tastier) and more from scratch ingredients (no canned soup).
1 yellow onion, diced
1 1/2 inch knob of ginger, finely diced
2-3 cloves of garlic, finely minced
enough seeded jalapeno, finely diced, that you can handle
smoked paprika
curry powder
garam masala
turmeric
2-3 tbs of tomato paste
28 ounce can of fire roasted tomatoes
2 lbs of boneless, skinless chicken thighs
1 can of coconut milk
Cook the onion, ginger, garlic, and jalapeno in a skillet with a little oil
Add the spices and cook until fragrant
Add the diced chicken, tomatoes, tomato paste and onion mixture to a crockpot
Stir and cook in high 4-5 hours
Add the coconut milk in the last 30 minutes, enough to get the right consistency
Serve with garlic naan, rice and roasted cauliflower*
*Roasted at 450 for 10-12 minutes seasoned with salt, pepper, turmeric, and curry.
