White bean, salami and arugula sandwiches
Adapted from Serious Eats.
I went looking for this recipe in my archives and couldn't find it. I've made this off and on for a few years but never written it up.
1 tsp olive oil
1 clove of garlic crushed and minced
1 can white beans, drained and rinsed
1 bay leaf
1/8 tsp salt
1/4 cup chicken broth
horseradish to taste
For the sandwiches
baguette
salami
arugula
In a small fry pan, heat the oil over low heat.
Add the garlic and cook until fragrant.
Increase heat to medium high and add the beans, bay leaf, and salt and cook until warm, about 2 minutes.
Add the chicken broth and cook until liquid is reduced by half, about 3 minutes.
Remove from heat.
Remove bay leaf and smash the beans with a fork.
Add in horseradish to taste and mix.
In a sliced baguette, spread white bean mixture on both sides then top with salami and argugula.
