Citrus sweet onion dressing

This is the dressing I was looking for to go with our broccoli and red cabbage salad.   Use a stick blender with it's attachment jar or other small food processor. 

From Cooking with Curls.

1 cup diced sweet onion
1/2 cup neutral oil
1/4 cup lemon juice
3 tbs honey or agave
2 tbs Dijon or whole grain mustard
1/2 tsp salt
1/4 tsp sweet paprika
1 large clove of garlic
Xantham gum, if desired for thickening

Combine everything but the thickener in a small food processor and blend until smooth.
Add the xantham gum if desired, just remember that it will thicken as it cools.  Just add a little to begin with.
Store in the fridge for up to a week.
