Chopped cheese sandwiches

We didn't make our own rolls though we are going to try at some time in the future.  The holidays were NOT the time to try it out.

6 rolls cut almost all the way through 

2 pounds of ground beef, not lean

12 pieces of american cheese

Chopped sweet onion

A little chopped green pepper or something else hotter if you want

Shedded lettuce or shredduce

Sliced tomato seasoned with salt

Parchment paper for wrapping

For the sauce:

1/2 cup of mayo

1 tbs Worchesershire sauce

As much hot sauce as you want

Divide up your meat into 6 portions 

Place you meat on a hot cast iron pan and season generously with salt

Smash it flat with a spatula and cook until you have a nice crust on one side

Flip it over and then start to break it apart, making as much noise as you want to as you chop it

Add in some onion and pepper and continue to chop

Add two slices of cheese and let it melt

Toast the insides of the bread and top both sides with your sauce

Add in your meat and cheese mixture and top with tomatoes and lettuce

Wrap tightly in parchment and then cut in half to serve

If you aren't going to eat all your sandwiches, just don't top with cheese so you can reheat it again
