Greek salad

 Had this as a side with gyros tonight.  Had no idea that kiddos would like it so much.  Kiddo approved.

Adapted from Love and Lemons

Note, I didn't add the called for bell pepper (I don't like them raw) or Kalamata olives (kiddos don't like them).

1 large English cucumber, chopped into 1/4 inch slices and then quartered or sixths

2-3 seeded tomatoes, chopped into 1/4 inch pieces

half an onion, sliced into thin half moons, soaked in vinegar for about 5-10 mins to take the sharpness away

4 ounces (?) feta cheese, crumbled*


For the dressing-

1/4 cup olive oil

3 tbs red wine vinegar

1 crushed clove of garlic

1/2 tsp dried oregano

1/4 tsp Dijon mustard

1/2 tsp salt

black pepper to taste

agave to taste


Make dressing and shake in a lidded jar to combine.

Add dressing to the veg and cheese to taste (we didn't use it all)

Consume.


*did you know you can freeze some cheeses?  We freeze feta and cotija cheese in small amounts wrapped in plastic wrap if we can't use it all in one week.  Good for avocado toast, shakshuka, pulled pork tortas and small Greek salads.
