Broccoli reuben sandwiches

 Saw this recipe online in a few places.  I know our kids like ruebens, let's try this version.  Just like a regular rueben sandwich but replace the corned beef with roasted broccoli.  We tried the recipe as "written" with comeback sauce but I really think our homemade dressing would be better.  


4 medium broccoli heads, cut into small florets, roasted at 400 for 15-20 minutes with olive oil, salt, and pepper until they are tender and slightly charred in spots

Light rye bread

sauerkraut

Swiss cheese slices

1000 island dressing


This made enough for 6 generous sandwiches worth of broccoli and Mr. PB&C thinks they all grilled cheese sandwiches need to have two slices of cheese.
