Homemade 1000 island dressing
The smaller people in our house LOVE 1000 island dressing. We use it in several different recipes already so I wanted to find a way to make it at home. I do this so I can control the amount of sugar and salt in many things.
Here's the recipe for 1000 island dressing from the Kitchn that we love. Since it doesn't have a long shelf life, I only make this the night before and we usually eat an entire half batch.
3/4 c. mayo
1/4 c. ketchup
1 tsp apple cider vinegar
scant 1 tbsp grated or finely chopped onion
1 1/2-2 tbsp sweet pickle relish
1/2 tsp salt
1/4 tsp black pepper or chili powder
1/2 large hard boiled egg, peeled of course
1/2 tsp chopped roasted bell pepper, optional
1/2 tsp chopped fresh chives, if you have them
Hot sauce, if you want
In a medium bowl, combine mayo through black pepper or chili powder and mix to combine
Using a small sieve, press the egg yolk and white through with the back of a spoon.
Stir in any options ingredients and store in the fridge overnight to let the flavors meld.
