Mango hot sauce

We were gifted a DIY hot sauce kit a year (or more?!) ago.  It had a basic recipe, dried chiles, spices, and some bottles and caps.  We tested it out a few weekends ago and made one of the 6 or 7 suggested recipes.  This was the last option I would have picked but in the end, we let the kiddos decide what to make.  This version is a Caribbean mango hot sauce.  Stay tuned for additional versions of hot sauce.   There will be others.

1 dried guajillo pepper with seeds
3/4 c. hot water
2 cloves of garlic
2 tbs chopped cilantro
1/4 c finely diced onion
4 oz mango
1 tsp ground cayenne pepper
1 tsp ancho chili powder
1/2 tsp curry powder
1/2 c apple cider vinegar
1/4 tsp salt

Grind the pepper with seeds in a food processor
Add the water and blend until smooth
Let sit 5 minutes to let the flavors meld
Add the garlic, cilantro, onion and mango and blend until smooth
Add the vinegar and salt and blend one more time
Taste for seasoning (salt, spices and vinegar are all adjustable to your liking)
Add all to a small sauce pan and bring to simmer over low heat for at least 5 minutes
Remove from heat and let sit 20 minutes
Add to your clean and sanitized bottles and refrigerate at least two weeks *

*We are too impatient and didn't wait that long.  At first, we were afraid that the heat wasn't enough and wondered if we should have added another guajillo pepper.  I'm glad we didn't.   Not too spicy that the kids won't eat it, just a little bit of sweet so they will ask for it and just a bit of curry to make it all interesting.

10/2018 update-
We added that other pepper in this batch.  It's pretty thick so we'll have to add more liquid next time
