Pickle chips

Who likes pickle chips?

I was introduced to pickle chips from a local burger place.  Sooooo good.  I saw this recipe from Skinny Taste and decided to give it a try. 

1 large jar of dill pickle slices
3/4 cup Panko
1/3 cup cornmeal
1/3 cup flour
1/4 tsp smoked paprika
1/2 tsp chili powder
1/4 cup fresh chopped parsley
2 eggs
olive oil spray

Preheat a sheet pan in the oven at 450.  
Remove pickles from jar and drain on paper towels.
Mix Panko, corn meal, flour and spices in a pie plate.
Whisk up eggs in another pie plate.
When you're ready, dip pickles in the egg wash then Panko mix and place on an olive oil sprayed sheet pan.
Bake 10 minutes and then flip each one and spray again with olive oil.
Bake 5 more minutes or until crispy (this last time I think I had to bake the second side for 10 minutes as the pickles were pretty big).

Serve with ranch dip.
