Oatmeal Chocolate Chip cookies
I did some baking with the kiddos today. These turned out really good.

Here is my super accurate high altitude version.
3/4 c. (170 grams) unsalted butter, room temperature
1 c. (210 grams) packed light brown sugar
1 large egg
1 tsp vanilla extract
3/4 c.(105 grams) + 2 tbs all purpose flour
1/2 tsp baking soda
1/2 tsp salt
1/2 tsp ground cinnamon
3 c. (260 grams) old-fashioned rolled oats
1 c. chocolate chips
Cream the butter and sugar in your stand mixer with a paddle attachment.
Add the egg and vanilla, mix for another 2-3 minutes.
In a seperate bowl mix the flour, baking soda, salt and cinnamon with a fork.
Add the flour mixture and mix until well combined.
Stir in the oats and chocolate chips.
Roll dough into 1 inch balls and flatten slightly with wet finger until they are about 1/2 inch thick.
Place on a cookie sheet with a Siplat or parchment paper cut to fit.
Bake at 350 (my oven runs cold so for high altitude I would knock it down to 340 in a different oven) and bake for 13-14 minutes.
Remove from oven and cook on a baking sheet.
