Kebobs

 Do me a favor and make yourself some home made pita bread for this.  They take just one rising and they are excellent.

We're getting better at guessing at ingredients and cooking instructions.  This was one of those and last night, it really hit the spot.

Mix these in a bowl-

Half a grated onion, squeezed of a lot of the water

Spices like paprika, a little cayenne, cumin, chopped fresh parsley, and mint, salt

A grated clove of garlic

Add in 

1 tbs ground beef (I guess you could mix in lamb if you want too)

And mix again

On a foiled lined sheetpan, place

2 roma tomatoes, quartered sprinkled with a little olive oil and salt

Make a rectangle shape with your meat and split into thirds with a spatula, separate them a little too

Sprinkle the meat with a little more olive oil and bake until the meat is done 400 for 15-ish minutes (I don't remember)

Set the oven to broil for a little bit too

For assembly you'll also need a pickle spear (we used dill)

some thin red onion slices with chopped parsley and sumac

And tahini mixed with grated garlic, lemon juice, harissa, salt, and a little water to get the right consistency (taste this to see if it's tasty, we had to add more lemon juice and salt our first time around
