Another spatchcocked turkey update

 We have a bunch of these updates now, I really should link them all up.


This year we tried something new.

1 cup of kosher salt

1 tbs baking powder

Mix well and season both sides of the turkey

Spread it out on a rack and place in the fridge at least 8 hours but preferrably overnight


For the herb butter

1 stick softened butter

herbs that you want 2 tbs fresh or 1 tbs dried, I'm guessing)


Before putting turkey in the oven, use your fingers to separate the skin from the bird

Spread the butter under the skin, as much as you can reach


Bake at 450 for 40 minutes

then lower the temp until it's done, internal temperature of 170

Tent at least one hour
