Sweet potato soup with cauliflower

As with some other soup recipes, it's the hit of acid that really makes this dish.  Hit it with as much lemon juice as you'd like to serve it.


3-4 peeled sweet potatoes, cut into chunks

1 rough chopped red onion

1 large cauliflower, chopped into florets

6 cups of broth

1/2 cup no salt cashews

1/2 inch hunk of peeled ginger root

Heavy lemon juice 


Toss the sweet potatoes and onion on one sheet pean with oil and salt

Toss the chopped cauliflower with oil and salt on another

Roast at 425 for 30 minutes

Flip the cauliflower and return to the oven to cook for another 10-15 minutes

Combine the vegetables with broth, cashews, and ginger in batches

Season with salt and as much lemon juice as you would like

Top with cauliflower bites and chives if you want
