Chipotle burrito bowls
We tried a recipe from Joshua Weissman for Chipotle like burrito bowls.
We like our cilantro lime rice, and corn salsa better but the take away from this recipe, was the chicken recipe.
We always take a full 7 ounce can of chipotles in adobo and blitz it up with the sauce and store in a jar in the fridge. For dinner last night we used 7 chicken thighs and a whole 7 ounce can of blitzed chipotles. Marinate for at least an hour or up to overnight (we did about 8 last night).
We grilled instead of cooking in a pan. Going to do this a lot when it's grilling season and we can't be bothered to cook inside.
Also, use the good black beans for this. Top with sour cream and shredded jack or cheddar cheese. And one last must, guacamole.
