Lemon potatoes

I've been looking for someGreek lemon potatoes since a popular restaurant went under several years ago.  I've only had them once so it's hard to compare these to what I had in the past.  These are really good though.  I'm using the potatoes to go with chicken meatballs, tomato and cucumber salad , and tzatziki.

1 cup of broth 

1/2 cup olive oil

1 1/2 lemons juiced (maybe 1/2 cup, I guessed)

4 cloves of garlic, minced

2 tsp dried oregano

2 tsp dill, fresh or dried

1 tbs Dijou mustard

1 heaping tsp salt

1 1/2 lbs small waxy potatoes cut into small bites

parsley to finish


Combine broth through salt in a 13 X 9 pan and mix well to combine

Add the potatoes and spread into one even level

Bake uncovered at 400 for 45 minutes or until they are tender, stirring once or twice to ensure all the potatoes are covered with the sauce

Top with parsley if desired
