Chai creme brulee

 One of the kiddos sent me this link and I wanted to make this for the house to enjoy this weekend.  I've only made creme brulee a few times but this came together quickly.  It was excellent.

Mix in a large bowl-
6 egg yolks
2 egg
150 g sugar

Whisk together

In a large pot, heat everything over medium heat, whisking often until it comes to a simmer, simmer a minute or two

855 ml of heavy cream 
4 opened black tea bags
1 star anise 
8 cloves
5 cardamon pods ( I think this is supposed to be green cardamom but I used 1 large crushed)
1.5 cinnamon sticks 
3 allspice seeds crushed 

Strain through a sieve 

Wait until it's slightly cooled and then pour slowly into the eggs with a whisk
Strain again 

Stir in 1 tsp vanilla 

Pour into 8 ramekins set in a large roasting pan

While the oven is heating to 325, boil some hot water for the the bain-marie
When the oven is to temperature, place the roasting pan into the oven and THEN add in enough water to come up half way up the ramekins, being careful not to splash into the ramekins

Bake for 45-47mins
The puddings should be slightly wobbly, not set, not liquid

Cool in the fridge for at least 2 hours
Top with sugar and torch until you get a nice crispy crust
