Roasted pork tenderloin

This rub is similar to the rub we use already but this still deserves it's own post, mostly for how to roast the pork.

We roasted two regular sized tenderloins for 6 people and had some leftovers still.

Before cooking, 

2 cloves of garlic, crushed

2 tsp lemon zest

2 tbs brown sugar

2 tsp mixed herbs

2 tsp sweet paprika

1 tsp ground cumin

2 tsp salt

1 tsp black pepper

2 small tenderloins

2 tbs olive oil


In a small bowl, combine garlic through pepper

Coat the pork, both sides, with oil and then cover both sides of the pork with the spice mixture

Cook in a roasting pan at 425 for 25 minutes or until the center of the thickest part of the loin reaches 145 F

Let rest 5-10 minutes before slicing and serving
