Whole chicken in a pressure cooker
We try and buy whole chickens to cook at home for the meat and then we cook again for the broth. Have you noticed how many things on our blog call for broth? We try and use homemade whenever we can since we can reuse those carrot and onion scraps as well as control how much salt is in our broth.
For a whole chicken-
Stuff a whole lemon cut in half, plus fresh thyme into the chicken cavity
Top with salt and pepper and cook on high pressure for 28 minutes
Natural release
Let cool and shred but save the bones, skin, and other stuff to make your own broth
