Three more sandwiches
Writing down these two sandwiches that we've had in the house recently. Kids politely asked to have something else but that just means more for mom and dad.

Sandwiches are a way to use up what you've got in the fridge, when it's too hot to cook, for Fridays after a long week, when you break your arm and have to eat with one hand.
Nicoise toast
Toasted bread or roll
Dress the bread, both sides please, with a mixture of mayo, white wine vinegar, smoked paprika, grated garlic or garlic powder and salt
Thinly sliced shallot soaked in lemon juice, sugar, and salt
Oil packed in tuna dressed with lemon juice
8 minute eggs if you are at sea level, 11-12 minutes eggs for us here
Torn kalamata olives
Fresh dill
more olive oil and lemon juice
Assemble more or less in that order
A veggie and feta sandwich
Made one tonight so this is based on one serving
Toasted roll
Mix 40 grams feta cheese with 1 tbs of mayo, garlic powder and a little lemon zest
Roast up some zucchini and onion at 450 for about 10 minutes or until tender
Some white wine marinated mushrooms
Salami if you have it
Spread both sides of the bread with the feta mixture and then add your toppings
Note-the original feta and veggie sandwich called for pepper and not onion but I'm not a big fan of pepper. This version was perfect for me but switch it up if you want.

Tomatoes, salted them lightly please
Oregano
Mayo or red wine vinegar and EVOO
