Greek meatballs with cauli rice and tomato salad
Made this a few weeks ago. A couple of firsts. First time making cauliflower rice. First time kids ate meatballs for breakfast. First time rolling meatballs in tapioca flour (it gave it a nice crispy outside but a soft center. Going to try this with other meatball recipes). Made a couple of subs since we didn't have all the fresh herbs and couldn't find ground lamb either, used turkey that we already had on hand.
Made this one night after dinner and it took a while but lunches that week were fabulous. Perfect for meal prepping.
For the meatballs-
1 1/2 lbs ground lamb
1 cup finely diced red onion
1 egg, slightly beaten
3 garlic cloves, crushed and minced
1/2 cup chopped fresh parsley
1 tbs chopped fresh mint
1 tsp dried oregano
1/2 tbs olive oil
salt and pepper to taste
tapioca flour for rolling
oil for frying
For the salad-
1 large English cucumber, chopped
1 1/2 cups cherry tomatoes, halved
1/2 cup diced red onion
as many kalamata olives as you would like
pepperoncini, if you like them
1/2 tbs red wine vinegar
1/2 tbs olive oil
1 tbs lemon juice
1/4 tsp dried oregano
salt and pepper to taste
For the tzatziki sauce-
1 cup Greek yogurt
1/2 cup chopped cucumber
3 garlic cloves, crushed and chopped
1 tbs olive oil
2 tbs chopped fresh dill
salt and pepper to taste
For the cauliflower rice-
5 cups cauliflower rice (pulse the florets in the food processor until you get a fine texture)
1/4 cup chopped parsley
1/4 cup chopped dill
2 tbs chopped chives
2 tbs chopped basil
1 tbs or less olive oil
2 tbs lemon juice
salt and pepper to taste
For the meatballs combine everything but the tapioca flour and oil for frying in a large bowl
Refrigerate and let sit for one hour
While that's resting, make the tomato and cucumber salad by combining everything in a bowl
Make the tzatziki sauce by combining everything in a bowl
Make the cauliflower rice by heating the oil in a pan until hot
Add the cauliflower and cook on medium until the cauliflower until tender and starting to turn light brown in spots about 5-7 minutes, less time if you like it just tender and not browned
Off heat, add in the rest of the ingredients
Make the meatballs by heating oil for frying in a cast iron pan
Roll 1 inch sized meatballs in a bit of tapioca starch to cover and cook 5-7 minutes until cooked through
Serve with rice, sauce, salad, shredded lettuce and lemon wedges
