Growing up, I thought Rotkohl was one of the worst ways to eat your veggies. Not anymore! It's pretty darn good and much better than the stuff you can get from a jar at the grocery store. Even better, it's simple to make.

2 tbs butter
5 cups finely shredded red cabbage
1 cup shredded apple
1/3 cup cider vinegar
3 tbs water
scant 1/4 cup sugar
2 1/4 tsp salt
1/4 tsp black pepper
1/4 tsp ground cloves (I very often leave this out, kids can pick out the taste almost right away and they aren't fans)
Put all in a large pot and bring to a boil
Reduce heat, cover and simmer until the cabbage is tender, about 1 1/2 to 2 hours.
