Spanish rice (side dish)
Not to be confused with my Spanish rice with ground beef main dish, here.

2 tbs olive oil
1 small onion, finely chopped
1 garlic clove, minced
2 cups medium grain rice
3 cups low salt chicken broth
1 heaping tbs tomato paste
pinch of oregano
1 tsp salt
Heat the oil in a large heavy bottomed pot.
Add the rice and cook until the rice is almost all toasted.
Add the onion and cook another 3 minutes.
Add the garlic and cook another 1 minute.
Add the chicken broth, tomato paste, oregano and salt and bring to a boil
Cover and simmer 15-25 minutes depending on the rice instructions.
