Hiyashi chuka

Or cold noodles with ham and veggies.  Another recipe from Serious Eats.
When the fresh produce is great and the temps are hot, this is the noodle dish you want to be making and eating.

About 22 ounces fresh ramen noodles (we've used a package of chuka soba noodles in a pinch)
1 ear cooked corn, kernels removed
1 egg, beaten and cooked in a small non stick fry pan, rolled up then sliced
grated carrot
English cucumber, julienned
1/4 lbs sliced ham
nori sheets, sliced
scallions, sliced
tomatoes, sliced

Other additions include poached shrimp or shredded krab sticks

For the sauce, combine in a small bowl- (this is for two servings)
3 tbs soy sauce
3 tbs rice vinegar
1 small tbs sugar
5 tbs chicken broth
1 tsp grated fresh ginger
1 small tsp toasted sesame oil

To serve, put noodles in the bottom of your bowl, top with veggies, ham and egg.
Pour dressing over top.
