Breakfast biscuits

In looking for a link for the original poster, I found lots of variations of these. Pizza, spinach and feta, and she's right, these can be in whatever combo of protein and vegetables you want/like/have.
Please take the time to chop your veggies nice and small
1-2 tbs olive oil
1 large onion, chopped
1 red bell pepper, chopped
1 lbs pork sausage
2 tsp salt
1/2 tsp black pepper
6 eggs
6 oz shredded cheddar cheese
1 1/2 cups AP flour *
2 tsp baking powder
Cook the onion and pepper in a large skillet with the olive oil over medium heat
When almost done, move the veg to the sides of the pan and add the sausage
With your cooking utensil, break up the sausage and cook until done
Mix the veg back in
Drain any oil that is in the pan and discard
Remove from heat and season with salt and pepper (and the original recipe had sage too, add it here if you want)
Add one cup of cheese, flour, and baking powder until combined
On a parchment lined sheet tray make 12-16 biscuits
With oiled hands, flatten them on the top and add the remaining 1/2 cup of cheese on top
Bake at 375 for 12-14 minutes or until lightly brown
*the original post had gluten free almond and coconut flour in it but I didn't have those flours (though almond flour is great in pancakes sometimes). I think I needed a little more AP flour than if I used the GF options. The dough should be sticky but it does need to form together in a ball.
