Grated French carrot salad

 I've made this a few times, I need to ask a friend for some more details but this is close to what was with every lunch of dinner plate when we visited Alsace it seemed like.  And then when the CSA delivers carrots many weeks in a row, you make this.  And eat it a bunch.

1 lbs carrots, shredded in your food processor

2 tbs EVOO 

1 tbs lemon juice, or more to your liking 

1/2 tsp kosher salt

1 tsp (or more) Dijon mustard

1/4 to sugar or honey

1/4 cup fresh chopped herbs if you want 


Mix it all up very well and serve preferably at room temperature
