Enoki beef rolls
We adapted these rolls and also probably increased a little to serve the family but these were really good. If you don't love mushrooms, wrap them in onions or other of your fave veggies (pepper or zucchini)
20 slices of thinly sliced beef, found in the Asian market
1-2 packs of enoki mushroom, separated (other veggies if you're using
1-2 large sliced onions
4 eggs beaten
Sliced green onion to garnish
Hot Cooked rice
For the Sauce
2 cup dashi stock
generous 1/4 cup soy sauce
1/4 cup mirin
1 tsp black pepper
Wrap a piece of beef around your veggie and set aside, seam side down while you work on the rest
In a large mixing cup combine the dashi, soy sauce, mirin, and black pepper
Drizzle some oil in a large pan and add the onion
Cook over medium high heat and cook for 3-4 minutes until the onion is slightly soft
Please the beef rolls on top of the onion in one layer and drizzle over the sauce
Cover and let cook for 3 minutes
Depending on hoe thin the beef if, you might want to turn over the beef and let it cook more
Then drizzle the beaten egg all around and cover again, cooking for another 2-3 minutes or until the egg is set
Garnish with green onion
Serve over rice
