Summer cucumber buster
Anyone with a garden or who is part of a CSA, you're about to get a lot of cucumbers. We've already made some half sweet pickles for our oldest and I wanted to start up another batch of cucumber side dishes, this one from my childhood.
My dad got this recipe, I suspect, from his mom and her extended family. In our house, it was always in one particular burgundy plastic container. Do not even think about using that one for anything other than these cucumbers. I had to call him yesterday while he was out visiting all the baseball parks with his cousin. These are always better the longer they sit in your fridge.
You will need-
Thinly sliced peeled cucumbers (garden ones work best here)
White vinegar
Flavorless oil
Salt
Pepper
Chili flakes if you want it spicy
Ratio is two parts water, two parts vinegar, one part oil
Add in salt, pepper, and red pepper flakes if you want it
Store in the fridge, adding in more cucumbers as needed
