Chicken and White Bean Chili

The recipe I used was from a family member but we've altered it to use what we already had on hand, smoked turkey and the bones from that turkey.  This turned out amazing!  Not sure if it was from the smoked turkey, the home made broth from the pressure cooker or just that I was hungry yesterday.  Warning, this makes a lot so share with a friend!

Here's what we did-

1 stick of butter
2-3 medium onions,  chopped
4-5 cloves chopped garlic
1/3 cup flour
6 cups chicken broth *
2 cups half and half
4 cups cooked and chopped chicken
2 cups frozen corn or 6 ears grilled and kernels removed, corn on the cob
8 Anaheim peppers, roasted, peeled, seeded and diced
1 red bell pepper, roasted, peeled, seeded and diced
2 cans white beans, rinsed and drained
a few dashes of cinnamon
1 tbs chili powder
1 tbs ground cumin
salt and pepper to taste
1 cup sour cream 
1 1/2 cup shredded jack cheese


Melt your butter in a large dutch oven over medium heat
Cook the onions until almost done then add the garlic to cook.  Do not brown! This might take a while.
Add the flour and cook until lightly brown.
Gradually add in the stock and half and half and bring to a simmer and thicken.
Cook until slightly thickened.
Add in chicken, corn, both peppers, beans, and spices.
Simmer 20 minutes to blend the flavors and taste for seasoning.
Off heat, add sour cream and cheese and combine. 

*with a pressure cooker, add the bones, 2 medium carrots, a quartered onion and 3 stalks of celery.  Cover with water and then cook on high for 240 minutes.  Strain, cool and defat if necessary.
