Pimento cheese

We love appetizer nights at our house.  My mom shared some Pimento cheese from the Pioneer Woman with us a few weeks ago and it was great.   Serve with baguette, pita chips, crudite, mini bell peppers, whatever you'd like

She had to add a little more cream cheese as directed so I'll revise when I try it myself.  I'll keep it as written from PW herself.

4 ounces softened cream cheese
1/2 cup mayo
1 tbs chipotle in adobe with sauce or to taste
1/2 tsp black pepper
8 oz shredded cheddar
8 oz shredded Monterey Jack cheese
4 ounces chopped pimentos

Mix cream cheese, chipotle, mayo and pepper until smooth.
Fold in cheeses and pepper.
Chill for 2 hours before serving.
