Panko

Once upon a time, I ended up with too much bread.  Too much bread, too little time.  I wanted to use up a bunch of Italian bread from the store but needed it out of my kitchen.  I made panko and stuck it in the freezer for later use.

Run your bread through your food processor's shredder disk and then bake on a cookie sheet at 300 6-8 minutes.  Do no let the bread brown so don't walk away from it.  Turn them over once to ensure even cooking.
