Veggies in the meat drawer

We've been sharing (and sharing and sharing) our veggies from the CSA and we still have veggies all over the fridge.

Sunday we made Octoberfest cabbage and sausage soup
Also on Sunday I made collard greens for a heat and eat meal on Monday.  We made cornbread from Budget Bytes and it was also terrific.
I also roasted two butternut squashes so this pasta dish was a quick meal last night.

For the rest of the week we are having
Coq au Chardonnay
Taco Salad
Swedish Meatballs

Next week-
Vegan ramen
Something with restaurant style salsa
Something with parsnip fries
Carrot ginger dressing for lunches and salads
