Quinoa bites

I tried these Quinoa bites from Iowa Girl Eats as an attempt for a bite sized lunch option for bentos.  Turns out neither likes chopped pepperoni so they were relegated as lunches for me.  I ended up adding all kinds of cheese, meat and veggies to these and they were great.  I will try again, just without pepperoni for the kiddos.  These work great as a freezer option as well.  Freeze on a sheet pan so they don't stick to each other and then add to a large bag for storage.  Take out a few the night before for an easy bento option.

2 c cooked quinoa, cooled and chilled (about 1/2 c. uncooked)
2 whole eggs
2 egg whites
2 cups chopped filling
1 cup shredded mozzarella cheese
1/4 cup shredded parmesan
1 tsp Italian seasoning
Pizza sauce for dipping

Preheat oven to 350
Add everything but the pizza sauce and combine well
Spray your mini muffin tin well and then add filling to the cup
Bake muffins on a baking sheet, just in case it spills, for 15-20 minutes or until slightly browned
Remove and let let 5 mins then remove from cups
Serve with pizza sauce for dipping
