Meatball bun
After another trip to the Asian market, we ended up with more thin rice noodles. Another night for bun at our house.
We used the same veggies as in our other bun recipe but this time we made meatballs (from this website). I made the meatballs the night before for a really quick dinner and it was awesome. The kids love putting together their own bowls and they love eating with chopsticks. We tend to steer away from the fresh mint in our bowls but the fresh basil and peanuts are a must.
1 lbs ground pork
1 tsp fresh black pepper
1 tbs sugar
3 tbs soy sauce
1 clove garlic, minced
salt
2 tbs sugar
1/4 c water
1 c water
Combine the pork, pepper, 1 tbs sugar, soy sauce, garlic and salt and form into small balls
Brown the meatballs in a small pan and remove when done, do not clean out pan
Add 2 tbs sugar and 1/4 cup water and whisk until the sugar dissolves, cooking over high until the mixture is brown and bubbly
Add the rest of the water and heat through
Add the meatballs and stir to combine and coat
Add your meatballs to cooked and drained rice noodles and veggies of your choice (we do lettuce, carrots, cucumber, crushed peanuts, basil and nouc cham).
