Fantastic Salad
Keeping a weekly meal plan has kept my family as well as my sister's family sane. She's taken to sharing her menus on Google Calendar and I had to ask her what a "fantastic salad" was. It's a recipe from her friend Kerri.
1 pound green beans
Vinaigrette dressing (recipe below)
2 tomatoes, cut into wedges
1 small onion, sliced
¼ cup grated parmesan cheese
Ripe olives
Lettuce
Remove ends from beans and cut into small pieces if they are too big.
Heat beans and 1 inch salted water (1/2 teaspoon salt to 1 cup water) to boiling.
Cook uncovered 5-10 for skinny beans, 10-15 for thicker beans.
Prepare vinaigrette dressing.
Pour over warm beans and toss.
Cover and refrigerate at least 2 hours.
Remove beans to lettuce-lined plate with slotted spoon.
Add tomatoes and onion.
Sprinkle with cheese; garnish with olives.

2 tablespoons wine vinegar
1 clove garlic, chopped
1 teaspoon salt
½ teaspoon prepared dark mustard
Dash of pepper
