Sweet and Sour Chicken
We gave this version of Chinese take out because it turns out that one girl doesn't like fried food. We think it's the deep frying in vegetable oil that she didn't like so we gave this sear and bake version a try instead. It worked for her and now I can make my own take out. I think I'm going to update our version of Orange Chicken using this method instead. I'll report on that when I can.

We doubled the sauce and as the original blogger posted, warm half the sauce on the stove in a small saucepan for 8-10 minutes or until it's thicken. We needed some of the extra sauce since we steamed veggies with it and mixed it all together.
3-4 boneless, skinless chicken breasts
Salt and pepper
1 cup cornstarch
3 large eggs, beaten
1/4 cup canola oil
For the sauce
3/4 cup granulated sugar
1/2 cup ketchup
1 cup apple cider vinegar
2 tablespoons soy sauce
2 teaspoons garlic powder
Preheat the oven to 325 degrees F
Heat the oil in a large skillet over medium heat
While the oil is heating, cut the chicken breasts into 3/4-inch pieces
Season with salt and pepper
Place the cornstarch in a gallon-sized ziploc bag
Put the chicken into the bag with the cornstarch and seal, tossing to coat the chicken
Whisk the eggs together in a shallow pie plate
Dip the cornstarch-coated chicken pieces in the egg and place them carefully in a single layer in the hot skillet
Cook for 1-2 minutes and then flip each piece over to cook on the other side until nicely golden but not all the way cooked through
Place in a single layer in a baking dish and repeat with the remaining chicken pieces
Mix the sauce ingredients together in a medium bowl and pour over the chicken in the baking dish
Bake for one hour, turning the chicken once or twice while cooking to coat evenly with sauce
Serve over hot, steamed rice, steamed veggies (snow peas, broccoli, carrots, water chestnuts, whatever you like) and extra sauce to taste

Yup, this works. It's messy since they like to use their cheater chopsticks but a kid's gotta learn somehow.
Update 4/4/13-
Made it again tonight with water chestnuts and blanched snow peas. The girls requested seconds on their chicken and Mr. PB&C and I agree, it's much better than take out. It comes without the weird orange sauce, the battered and deep fried chicken and the peppers and pineapple that we always pick out anyway.

Long overdue update. It always requires an extra egg so I've updated that now. Also, we just use all the sauce over the chicken. It makes it nice and saucy and we like it that way.
