Chicken and brie croissants with honey mustard

This needs a recipe so Mr. Peanut Butter and Chutney can make these going forward. It's something I made up for a special Mother's Day lunch with my mom and Nana many years ago.

1 lbs chicken, cooked and sliced (grilled, pan fried or roasted, your choice)
6 oz brie cheese
split croissants
lettuce, thinly sliced onion and tomato
honey mustard for dressing*

 Slice your chicken and put the brie on top, melt in the toaster over about 5 minutes on 375 or until the cheese in melted
Transfer to croissants and top with lettuce, onion and tomato
Drizzle the top with honey mustard

Toddler review-
We asked the kids if they wanted to taste the brie before we put it on their sandwiches, they all turned down the brie (that's fine, more for us). We sprinkled the top of their chicken with parmesan cheese and melted it. Toddler approved.

To make honey mustard dressing-
Mix some Dijon mustard with honey (I like a little more mustard than honey but adjust to your own liking)
Add a small splash of white wine vinegar and season with salt and pepper
